
Challenges and solutions from hygiene intervention targeting traditional pig slaughterhouses in western Kenya and Vietnam
Abstract
Animal-sourced food is susceptible to bacterial contamination throughout the production process. Slaughterhouses (SH) are key points here hygiene is crucial, especially in developing countries. Recent studies in Kenya and Vietnam have been undertaken to test and implement potential measures for enhancing hygiene practices in these traditional facilities.
